Here is a slow-motion video of a single kernel of popcorn popping taken at 6,200 frames per second from the folks behind Modernist Cuisine. They explain that once the kernel reaches a certain point of internal steam pressure, "the kernel is released very rapidly, expanding the starch and proteins into a dense foam that sets quickly."
